Berry Whip & Cookie Crumble – The Taste of Finnish Midsummer

With berries, whipped cream and crumbled Vanajan oat biscuits, this dessert brings sweet Midsummer moments to the table for everyone to enjoy.

Ingredients

  • BERRY WHIP
    • 250 g quark
    • 2 dl whipping cream
    • 3 tbsp powdered sugar
    • 1 tsp vanilla sugar
    • 1 dl crushed berries (e.g. blueberries, raspberries or strawberries)
  • COOKIE CRUMBLE
    • 100 g Vanajan oat biscuits
    • 25 g butter, melted

Instructions

  • COOKIE CRUMBLE
    • Crush the oat biscuits into fine crumbs and mix in the melted butter.
    • Spread the mixture onto a baking sheet lined with parchment paper and toast in the oven at 175 °C (350 °F) for about 5–7 minutes, until golden brown.
    • Let cool completely.
  • BERRY WHIP
    • Whip the cream until fluffy.
    • Add the quark, powdered sugar, vanilla sugar, and crushed berries.
    • Gently fold everything together until smooth and airy.
  • ASSEMBLE THE DESSERT
    • Spoon the berry whip into serving glasses or bowls and top with the toasted cookie crumble. For extra flavour, add a few fresh berries on top.
    • Enjoy right away or chill in the fridge before serving.
